Tina’s Cinnamon Rolls
Dough Ingredients
6c flour, divided
1/2c sugar
2tsp salt
1 1/2 Tbsp (2 pkg) active dry yeast
1 can (12oz) evaporated milk, warmed
1/2c hot water
1/2c melted butter
2 eggs, beaten

Pre-heat oven to 350F.  Let yeast proof in water in large bowl for about 10 minutes.  Combine 2c flour, sugar, salt in medium bowl, set aside.  Once yeast is frothy, stir in melted butter, warmed milk, and beaten eggs.  Once mixed, add flour mixture.  Mix well, then slowly add 3c flour, mixing well with each cup added. Knead last cup of flour into dough on counter or pastry sheet.  Use more flour sparingly if necessary to make it easier to handle.  Don’t let the dough get too firm or stiff.  You want it a little sticky.
Put into lightly greased large bowl, cover loosely, away from drafts in a warm place.  (I like to stick it right on the stove.)  Let rise for about 60 minutes or until double in bulk. While letting the dough ride, make filling.
Punch down, knead lightly a couple times and let rest for a couple minutes before rolling out.  Roll into a large rectangle (about 18”x24”).  Cut in half so you have two 9”x24” pieces of dough.

Filling Ingredients - Mix well together and spread on prepared dough.
1/2c softened butter
3 tsp vanilla
1/4c cinnamon & sugar
2 tsp cinnamon
3/4c brown sugar (VERY IMPORTANT!)

Spread on filling, roll, seal with water.  Cut each roll into 12 pieces. Arrange each dozen in a greased 9x12 pan. Cover, let rise in warm place about 40 minutes. While waiting on the second rise, make frosting.
Bake for about 20 minutes or until edges are barely light brown.  Do NOT over bake!
Top with favorite frosting.

Suggested Frosting
3-4oz softened cream cheese (or more to taste)
1/4c softened butter
2c confectioner’s sugar
1 tsp vanilla
1/8 tsp salt
A little milk as needed for desired consistency

Beat all together, adding additional confectioner’s sugar and milk as needed.
